Grilled Chicken & Mango Taco Salad

This delicious dish is simple to make, and looks great on the table.  Molds for making tortilla bowls are available from a wide range of manufacturers including one from Avon; however, if you do not have one, try this easy method to create your own.

First, you will need an oven-safe 4-6 quart bowl. Preheat your oven to 350° F. Next, heat a large tortilla from La Mesa Tortillas enough to allow it to be bendable. Place the bowl upside-down on your countertop. Coat both sides of the tortilla with cooking spray and place on the bowl. Place the bowl in the oven and bake for 10-12 min, until the tortilla is golden and crispy.

Ingredients for salad:
• 1½ cups chopped romaine lettuce
• ¼ cup halved cherry tomatoes
• ¼ cup or less sliced red onion
• 3 tbsp corn (grilled corn adds a great flavor)
• Sliced grilled chicken breast
• 1 tbsp sliced almonds (toasted) [optional]
• Mango Vinaigrette Dressing (available at MarthaStewart.com)

Grilled Chicken & Jalapeño Pesto Burrito in a La Mesa Tortillas Wheat Tortilla

The kick in this jalapeño pesto makes it good enough to use to spice-up any meal

For Jalapeño Pesto
Using a blender or food processor, purée...
• 2 cups chopped basil leaves
• 3-4 cloves garlic; peeled and chopped
• 2 tbsp olive oil
• ¼ cup pine nuts
• salt and pepper to taste
• 1-2 jalapeños, diced (for a milder pesto, remove the seeds and ribs)

Ingredients you can add to your burrito:
• Grilled chicken
• Corn
• Chopped lettuce
• Diced tomatoes
• Sliced red onion
*For a lighter snack, try substituting the grilled chicken with your favorite deli meats*
